Zoe Jordan’s famous Kerala Sea bass Curry…
First, pan fry shallots, ginger and garlic, stir until brown and then add some water, tumeric, cayenne pepper, paprika, lots of black pepper, lemon juice and a pinch of salt.
Then, let it simmer and add the coconut milk.
Put the sea bass fillets in the pan and cover over med-low heat, spooning sauce over them until they are poached (5-10mins).
For the South Indian style green beans:
Boil the beans for 4-5mins until just tender and then drain and leave in colander. Pan fry cumin, mustard and sesame seeds and as soon as the seeds start popping add the beans, stir for about a minute adding salt and cayenne pepper and serve immediately!
